Southern Classics & Beer Pairing

So I was still quite scarce last week.

One: because I haven’t gotten back into the blogging groove after my surgery (i’m back this week, though!)

Two: I was preparing for my first paid “catering” gig. Yah, It was for a good friend of ours, but it still counts! 😉 He just finished  a complete renovation on a house he bought and has had this “family” dinner idea in his head all along. He was going to hire someone to cook and I said, “Hey, I’ll do it!!” And that’s how it all started.

For the first event, he requested “Southern-Style” food to go along with the southern feel he was going for with his home. Then, hubs had the (genius) idea to turn it into a beer pairing. Done & Done.

We put our noggins together and here’s the menu we came up with:

I created the menu FIRST and then we went to Total Wine to peruse the craft beers section and find beers to compliment each dish. We bought a bunch of singles (one of the glorious perks of Total Wine), went home, iced them down, and then did a taste test of each of them (making sure the flavors would match my dishes). Thank goodness we did this trial run, because we ended up ditching two that were G-ROSS! We had to go back and find replacements, but eventually ended up with 5 winners!

    Ahh, this sounds awesome! I always want to do themed multicourse sit-down dinners for friends, but it’s not really up a lot of my friend’s allies - they’d rather have random potlucks. Can’t wait to see all the recipes!

    This was awesome! I used this menu and your recipes for a beer pairing birthday dinner for my husband. We had four other couples and everything was a hit. I didn’t make the fried green tomatoes (obviously, it’s October), so I subbed in a cheese course of Munster and Great Lakes Eliot Ness. I also couldn’t get my hands on Cigar City, so I used a local red ale. Besides that I followed your recipes and suggestions to a T, and everone loved it! The hot bacon dressing and the chicken tenders and waffles got rave reviews - even from the vegetarian in the crowd. I gave them all your blog address, I’ll sure they’ll be visiting soon. Thanks for making me wife of the year!
